This delectable Chocolate Coconut Chia Pudding is created with creamy coconut milk and topped with chocolate coconut almond butter.

I love chocolate, but I love it even more when it's combined with coconut and almonds. 

This Chocolate Coconut Chia Pudding was inspired by my Chocolate Coconut Almond Butter, which I like eating by the spoonful and have included into this recipe.

Sweet chocolate chia pudding made with full-fat coconut milk (unsweetened almond milk also works), topped with chocolate coconut almond butter, coconut flakes, and slivered almonds. 

Talk about indulging.Chia seeds become gelatinous when exposed to liquid, making them an excellent base for puddings such as my Vegan Neapolitan Pudding recipe. They are rich in fiber and low in carbohydrates.

If you use stevia instead of chocolate coconut almond butter or use a small amount of it, this becomes a vegan keto chocolate chia pudding.

 The chocolate coconut almond butter might also be made with stevia instead of maple syrup.
