Mango Chia Pudding

This Mango Chia Pudding recipe is ideal as a nutritious dessert or side dish. Made with only three ingredients - mango, chia seeds, and coconut milk - it's mildly sweet, tasty, and as simple as can be, not to mention Paleo and Vegan! 

This Mango Chia Pudding is one of my new favorite squeaky clean sweets (or breakfasts!), alongside my Banana Chia Pudding and Snickers Stuffed Dates! 

My kids have been wanting me to make it virtually every day this week, so I just had to share it with you all! 

This recipe is light and bright, full of flavor, but not too heavy or filling. It's just a pleasant sweet treat in the heat. 

But what is the best part? It's a no-cook dish, just like my Apple Pie Overnight Oats, and it's incredibly simple to prepare!My favorite thing about this dish is that it just requires three ingredients!  

Many chia pudding recipes call for sweeteners such as maple syrup or agave, but mangoes are inherently extremely sweet. You will not need any more sweetener! 

Light coconut milk. Full-fat coconut milk will work, however it becomes clumpy when chilled. Light coconut milk will still have some clumps, but it will be much smoother. 

The appropriate chia seed-to-liquid ratio is 1:4. Add 4 teaspoons of chia seeds to 1 cup of liquid. It will have a wonderful pudding-like consistency without being too thick.
