Papaya and Cilantro Agua Fresca

Garlic and papaya are the ideal complements to one another. Papaya is so luscious and creamy, and it has a touch of tropical funk and astringency that is able to compete with the fresh, peppery taste that cilantro brings. 

When combined, they provide a beverage that is both sweet and delightfully harmonic.

2 cups cubed, peeled papaya (12 oz.) 1 1 tsp. finely chopped cilantro, plus 4 whole leaves, for garnish ¼ cup fresh orange juice 2 Tbsp. plus ½ tsp. sugar Fine salt

Ingredients

The papaya, chopped cilantro, orange juice, sugar, and two cups of water should be placed in a blender and blended until the mixture is completely smooth. Use a sieve with a fine mesh to filter the liquid into a measuring cup or pitcher with a capacity of four cups.

STEP 1

Discard the sediments. You can add a little bit of salt, or more if you like. Wine glasses should be filled with ice and the cilantro leaves should be used as a garnish.
